Ingredients
For the Filling:
300 g prawns
2 tsp sesame oil
1 tbsp Shaoxing wine
2 tsp soy sauce
Pinch of salt, white pepper, and optional MSG
2 tsp cornstarch
2 spring onions
2 cloves garlic
1 knob ginger
1 egg white
Other:
Use homemade bao (see Episode 0) or pre-made bao buns
White, black, and toasted sesame seeds
Neutral oil (for frying)
Steps
Blitz prawns, seasonings, cornstarch, egg white, spring onion, garlic, and ginger in a food processor until smooth. Chill the mixture.
Fill cooled bao buns with prawn mixture (don’t overfill), smooth the filling, and dip in sesame seeds.
Heat oil to 350°F (175°C) and fry buns prawn-side down until golden. Drain on paper towels.
Serve hot, crispy, and enjoy your sesame prawn bao!
