Episode 5: Sesame Prawn Bao 🍤

Ingredients


For the Filling:

  • 300 g prawns

  • 2 tsp sesame oil

  • 1 tbsp Shaoxing wine

  • 2 tsp soy sauce

  • Pinch of salt, white pepper, and optional MSG

  • 2 tsp cornstarch

  • 2 spring onions

  • 2 cloves garlic

  • 1 knob ginger

  • 1 egg white


Other:

  • Use homemade bao (see Episode 0) or pre-made bao buns

  • White, black, and toasted sesame seeds

  • Neutral oil (for frying)


Steps

  1. Blitz prawns, seasonings, cornstarch, egg white, spring onion, garlic, and ginger in a food processor until smooth. Chill the mixture.

  2. Fill cooled bao buns with prawn mixture (don’t overfill), smooth the filling, and dip in sesame seeds.

  3. Heat oil to 350°F (175°C) and fry buns prawn-side down until golden. Drain on paper towels.

  4. Serve hot, crispy, and enjoy your sesame prawn bao!
