Ingredients
Paneer & Coating:
200 g paneer
2 tbsp soy sauce and hot sauce (for marination)
60 g plain flour
40 g corn flour
¼ tsp salt
½ tsp red chili powder
Oil for frying
Sauce & Garnish:
15 ml olive oil
50 g corn flour (10 g for slurry)
75 ml water (for slurry)
5 minced garlic cloves
1-inch minced ginger
60 g spring onion whites
1 pepper
2 tbsp soy sauce
1 tbsp each ketchup & hot sauce
1 tsp each sugar, black pepper, vinegar
30 g spring onion greens
Steps
Marinate paneer with soy and hot sauce, and sprinkle with a little salt. Set aside for 15 minutes.
Coat paneer in a mixture of plain flour, corn flour, salt, and chili powder.
Prepare slurry: Mix 10 g corn flour with 75 ml water and set aside.
Fry paneer until golden.
Make sauce by sautéing garlic and ginger, then adding spring onion whites, peppers, and the rest of the ingredients.
Toss paneer in the sauce and garnish with spring onion greens. Serve in bao with pickled onions.
