Episode 4: Honey & Jerk Seasoned Pork Belly Bao

Ingredients


For the Pork Belly:

  • 6 pork belly strips

  • 1 lime

  • 60 ml vinegar


Marinade:

  • 180 ml jerk marinade


For the Glaze:

  • 120 ml meat juices (from pork after cooking)

  • 60 ml jerk marinade

  • 120 ml ketchup

  • 120 ml honey


Additional Ingredients:

  • 1 fresh pineapple (sliced into rings)

  • 2 tbsp brown sugar

  • Pinch of salt

  • Extra jerk sauce

  • Fresh chilies (sliced)

  • Pickled onions


Steps

  1. Rinse pork belly and wash with lime juice and vinegar. Marinate with jerk marinade for at least 2 hours (overnight is best).

  2. Preheat the oven to 150°C. Roast pork covered with foil for 30 minutes.

  3. Mix meat juices with honey, ketchup, and jerk marinade. Glaze the pork belly and roast uncovered for 30 more minutes, glazing a couple of times.

  4. Grill pineapple rings with brown sugar and salt for 3-4 minutes.

  5. Plate the pork belly with extra jerk sauce, sliced chilies, and pickled onions, served with grilled pineapple rings.
