Ingredients
For the Pork Belly:
6 pork belly strips
1 lime
60 ml vinegar
Marinade:
180 ml jerk marinade
For the Glaze:
120 ml meat juices (from pork after cooking)
60 ml jerk marinade
120 ml ketchup
120 ml honey
Additional Ingredients:
1 fresh pineapple (sliced into rings)
2 tbsp brown sugar
Pinch of salt
Extra jerk sauce
Fresh chilies (sliced)
Pickled onions
Steps
Rinse pork belly and wash with lime juice and vinegar. Marinate with jerk marinade for at least 2 hours (overnight is best).
Preheat the oven to 150°C. Roast pork covered with foil for 30 minutes.
Mix meat juices with honey, ketchup, and jerk marinade. Glaze the pork belly and roast uncovered for 30 more minutes, glazing a couple of times.
Grill pineapple rings with brown sugar and salt for 3-4 minutes.
Plate the pork belly with extra jerk sauce, sliced chilies, and pickled onions, served with grilled pineapple rings.
