Episode 2: Taiwanese Fried Chicken Bao

Ingredients


For the Chicken:

  • 600 g chicken thighs (boneless & skinned)

  • 4 tbsp Chinese cooking wine/beer

  • 3 tbsp soy sauce

  • 1.5 tbsp five-spice powder

  • 1 tsp white pepper

  • 5 garlic cloves (grated)

  • 1 inch ginger (grated)


Batter:

  • 2.5 cups sweet potato flour

  • 2 large eggs

  • 4 tbsp cornstarch


Optional:

  • Pickled red onion

  • Chives

  • Red chili


Spice Blend:

  • ½ tsp five-spice powder

  • 1 tsp paprika

  • 1 tsp chili powder

  • ½ tsp salt

  • ½ tsp sugar


Sriracha Mayo:

  • ½ cup mayo

  • 2 tbsp sriracha

  • 1 tsp lime juice (optional)


Steps

  1. Marinate chicken in soy sauce, wine, spices, garlic, and ginger for 20 minutes.

  2. Mix eggs and cornstarch. Dip chicken in batter, coat with sweet potato flour, and rest for 5 minutes.

  3. Double fry: 8-10 minutes until golden, then 1-2 minutes for extra crispiness. Drain.

  4. Sprinkle spice blend and serve in steamed bao with sriracha mayo.
